Bake potatoes in 400F oven for 1 hour. In a large bowl mix baked ground meat & beans.
When potatoes are cool enough to handle, cut potatoes in half and scoop out centers of potatoes leaving ¼ inch of potato around the inside of the potato. Fill potato skins with bean & meat mixture, top with cheese.Return filled potatoes to oven and melt cheese, 3-5 minutes.
Drizzle potatoes with sour cream & top with scallions
