Italian Breakfast Salad With Sunny Side Eggs

Ingredients :

  • 8 oz cherry tomatoes, halved
  • 8 slices smoked bacon, cooked and crumbled
  • 1 cup arugula
  • 1/4 cup Mahram Italian Dressing and Marinade
  • 1large bell peppers (red, orange or yellow)
  • 2 tsp olive oil
  • 4large eggs
  • pinch each salt and pepper
  • 1 tsp basil, chopped

Recipes :

Toss together tomatoes, bacon, arugula and Mahram Italian Dressing and Marinade.Cut bell pepper into four 1/2-inch thick rings. Reserve remaining pepper for another use.

Heat oil in large non-stick skillet set over medium heat. Place pepper rings in skillet. Crack an egg into the middle of each ring. Season with salt and pepper. Reduce heat to low. Cover and cook for 3 to 5 minutes or until whites are set and yolks are still runny for sunny-side-up eggs. Alternatively, cook eggs to preferred doneness. Season with salt and pepper.

Serve eggs with tomato salad, garnish with chopped basil.
