Aghooz Mosamma (Duck and Walnut Stew)

Ingredients :

  • 600g duck
  • 200g walnuts
  • 75g onion
  • 50g Mahram pomegranate paste
  • 2 liters water
  • 75g sugar
  • 10g oil
  • 100g ground dried pomegranate seeds
  • Turmeric and salt to taste

Preparations :

Prepare the duck: Fry the duck pieces until golden. Sauté the onion: In the same pan, sauté the onions, then add the fried duck and water. Add the walnuts and pomegranate seeds: Once the water in the stew comes to a boil, add the ground dried pomegranate seeds and crushed walnuts.

Flavor the stew: Mix the tangy pomegranate paste, sugar, salt, and turmeric well, then add them to the stew. Simmer: Cook the stew on very low heat for about 2 hours until it thickens and the flavors meld together.
