Boil the butternut squash until softened. In a bowl mix the butternut squash, chickpea flour, rice flour, tumeric, garlic and ginger together and form kebab shaped patties. Heat a little oil in a pan and cook the koftas until golden all around. At the same tome place the flat bread under the grill to heat.
Add the koftas on top of the flat bread and serve with pickled red cabbage and a squeeze of Mahram Garlic Sauce.
