Mahram’s pickled garlic is offered in two types, white and red. Because its cold climate makes the texture of garlic very firm and its aroma better. Red garlic, or flower garlic, is also prepared from Fars province and Tarem city. This product is produced in vinegar. In the process of producing traditional pickled garlic, some garlic and vinegar and a little salt are mixed together and this mixture is kept for a long time so that its color gradually turns brown and the texture of the garlic becomes a little softer due to long-term contact with vinegar. Because usually in the industry, there is not much time to keep the garlic to turn it into pickles, they heat the garlic to get a softer texture and that’s why the mouth doesn’t smell like garlic.
