First, peel and wash the potatoes and onions thoroughly. Grate the potatoes and onions and squeeze out any excess water. Place the meat in a meat grinder and grind it together with the grated potatoes and onions. Add salt, pepper, and any other spices you like to the ground mixture and knead it until it loses most of its stickiness.
Grease a baking tray or the bottom of a pan with some butter. Spread the meat, potato, and onion mixture evenly on the surface. If the meat has little fat, you can add some oil at this stage.
Slice one potato and one tomato. Arrange the potato and tomato slices on top of the meat mixture. You can also chop some bell peppers or hot peppers and place them next to the meat.
Preheat the oven to 140°C (284°F) and place the tray or pan inside. The Sardashi kebab should stay in the oven for about 1 to 2 hours to cook thoroughly and for the potato and tomato slices to become crispy.
Your Hamdani Sardashi Kebab is ready. Serve it with fresh bread or rice, along with yogurt, fresh vegetables, and Mahram shallot pickles. Enjoy!
