Interestingly, the cucumber seeds used for pickling differ from those grown for raw consumption or greenhouse varieties. The shape of Mahram pickles is small and slender, with slightly bitter ends, and they boast a denser texture compared to other cucumbers, which may be larger and hollow.
Cucumber cultivation occurs twice a year:
- Summer planting begins in late July.
- Autumn planting takes place in November.
In the second half of the year, cucumbers are sourced from Qir and Karzin, a warm region in Fars province. These cucumbers are planted during the autumn season.

During the pasteurization process (where cucumbers are heated at high temperatures), the quicker the cooling of the pickle jars (which include garlic, tarragon, pepper, and vinegar), the crispier the final product.
