Mild Breakfast Burrito

  • 4 (10-inch) flour tortillas
  • ¼ cup (60 ml) canola oil
  • 1 onion
  • 4 Gold potatoes
  • salt
  • freshly ground black pepper
  • ½ lb (225g) breakfast sausage, casings removed
  • 8 large eggs
  • ⅔ cup (80g) grated cheese
  • ½ cup (120g) Mahram salsa

طرز تهیه :

Wrap the tortillas in foil and warm them up in an oven preheated to 350°F/180°C for 15 to 20 minutes.

Slice the onions and dice the potatoes into 1/2 inch (1.25 cm) cubes.

In the meantime, heat the oil for 2 to 3 minutes in a large skillet over medium heat. Spread the onions and potatoes in an even layer, and season with salt and pepper. Cook for 15 minutes, occasionally stirring, until they become brown. Set aside.

Sauté the sausage in a skillet for 5 minutes and remove any excess fat. Then, pour in whisked eggs and season them with salt and pepper. Cook shortly so they remain soft. When the eggs are done, sprinkle them with cheese.

Spread some salsa on each tortilla. Arrange scrambled eggs with sausage and potatoes on top and wrap them up.

Cover with salsa and serve.
