Panzanella Salad


Ingredients :

  • 3 tbsp Mahram olive oil
  • 1small French bread or day-old loaf, cut into 1-inch cubes (6 cups)
  • 1 tsp kosher salt
  • 2large ripe tomatoes, cut into 1-inch cubes
  • 1cucumber, unpeeled, seeded and sliced 1/2 inch thick
  • 1red bell pepper, seeded and cut into 1-inch cubes
  • 1yellow bell pepper, seeded and cut into 1-inch cubes
  • ½ red onion, cut in half and thinly sliced (optional)
  • 20large basil leaves, coarsely chopped
  • 1 bottle Mahram Italian Salad Dressing 

Recipes :

Pour the oil on a large baking sheet and toss the bread. Add a little salt and pepper, tossing frequently a few times, for 10 minutes or until nicely browned. In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion and basil.

Add the bread cubes and toss with Ken’s Zesty Italian Dressing. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.
