Doogh Ash

Ingredients :

  • 1 can of Mahram Golden Chickpeas
  • 1kg yogurt
  • 1 cup rice
  • 1 egg
  • 1kg herbs for Ash (parsley, cilantro, spinach, and dill)
  • 2 tablespoons flour
  • Black pepper, as needed
  • Salt, as needed

Preparations :

Dissolve the flour in one cup of water. Pour the yogurt into a pot and add the dissolved flour. Beat the egg in a bowl, add one ladle of yogurt mixture, and mix well. Then add it back to the pot while stirring continuously.

Add the rice, chopped herbs, water, and a bit of salt. Place the pot over low heat and cook until it comes to a boil and the rice is tender. Stir occasionally to prevent curdling. Add the Mahram golden chickpeas and adjust the salt.

Garnish as desired and serve hot.
